2 tablespoons (30 ml) lemon juice
4 large eggs
ΒΎ cup (180 ml) vegetable oil (sunflower or canola)
1 teaspoon vanilla extract
1 cup (200 g) granulated sugar
2 cups (250 g) all-purpose flour
2 teaspoons (10 g) baking soda
2 teaspoons (8 g) baking powder
ΒΌ teaspoon salt
Zest of 2β4 lemons
2 tablespoons poppy seeds
For the Lemon Glaze
1Β½ cups (190 g) powdered sugar
2 tablespoons (30 ml) lemon juice
1β2 tablespoons (15β30 ml) milk (as needed)
Zest of 1 lemon
Instructions
1. Combine the milk and lemon juice, then let the mixture sit for a few minutes to create homemade buttermilk.
2. Preheat the oven to 180Β°C (350Β°F). Grease a muffin tin or line it with paper cups.
3. In a large bowl, whisk together the eggs, oil, vanilla extract, and sugar.
4. Add the yogurt (if using) and mix until smooth.
5. In a separate bowl, whisk the flour, baking soda, baking powder, salt, lemon zest, and poppy seeds.
6. Gradually add the dry ingredients to the wet mixture, stirring just until combined β avoid overmixing.
