Ingredients
For the Cake:
- 1 ¾ cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ tsp baking powder
- 1 ½ tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
For the Frosting:
- 1 cup unsalted butter, softened
- 3 ½ cups powdered sugar
- ½ cup unsweetened cocoa powder
- ½ tsp salt
- 2 tsp vanilla extract
- 4-6 tbsp milk or heavy cream (adjust for desired consistency)
Optional Ingredients:
- Sprinkles, chocolate shavings, or fresh berries for garnish
Instructions
1. Make the Cake:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla to the dry ingredients. Mix until smooth.
- Gradually stir in boiling water until the batter is thin and smooth.
- Divide the batter evenly between the prepared pans.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
2. Make the Frosting:
- In a large bowl, beat butter until creamy.
- Gradually sift in powdered sugar and cocoa powder. Mix until combined.
- Add salt, vanilla, and 4 tablespoons of milk or cream. Beat until smooth and fluffy, adding more milk if needed.
3. Assemble the Cake:
- Place one cake layer on a serving plate. Spread a layer of frosting over the top.
- Place the second layer on top and frost the entire cake.
- Decorate with sprinkles, chocolate shavings, or berries as desired.
Tips for Success
- Use room-temperature ingredients for a smoother batter and even baking.
- Sift cocoa powder and powdered sugar to avoid lumps in the batter and frosting.
- For an ultra-moist cake, brush the layers with simple syrup before frosting.
Recommendations
- Serve with a scoop of vanilla ice cream or a glass of cold milk.
- For a twist, add a layer of raspberry jam or peanut butter between the cake layers.
