  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

For the Frosting:

  • 1 cup unsalted butter, softened
  • 3 ½ cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • ½ tsp salt
  • 2 tsp vanilla extract
  • 4-6 tbsp milk or heavy cream (adjust for desired consistency)

Optional Ingredients:

  • Sprinkles, chocolate shavings, or fresh berries for garnish

Instructions

1. Make the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla to the dry ingredients. Mix until smooth.
  4. Gradually stir in boiling water until the batter is thin and smooth.
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.

2. Make the Frosting:

  1. In a large bowl, beat butter until creamy.
  2. Gradually sift in powdered sugar and cocoa powder. Mix until combined.
  3. Add salt, vanilla, and 4 tablespoons of milk or cream. Beat until smooth and fluffy, adding more milk if needed.

3. Assemble the Cake:

  1. Place one cake layer on a serving plate. Spread a layer of frosting over the top.
  2. Place the second layer on top and frost the entire cake.
  3. Decorate with sprinkles, chocolate shavings, or berries as desired.

Tips for Success

  • Use room-temperature ingredients for a smoother batter and even baking.
  • Sift cocoa powder and powdered sugar to avoid lumps in the batter and frosting.
  • For an ultra-moist cake, brush the layers with simple syrup before frosting.

Recommendations

  • Serve with a scoop of vanilla ice cream or a glass of cold milk.
  • For a twist, add a layer of raspberry jam or peanut butter between the cake layers.
