Ingredients:

For the Lemon Cake:

  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup fresh lemon juice (about 2 lemons)
  • 2 tablespoons lemon zest
  • 1 cup buttermilk

For the Lemon Glaze:

  • 1 1/2 cups powdered sugar
  • 3-4 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Instructions:

Step 1: Prepare the Cake Batter

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish or two 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream the butter and sugar together until light and fluffy.
  4. Beat in the eggs one at a time, then add the vanilla extract, lemon juice, and lemon zest. Mix until smooth.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Start and end with the dry ingredients. Mix until just combined.

Step 2: Bake the Cake

  1. Pour the batter into the prepared baking dish or divide evenly between the two cake pans. Smooth the top with a spatula.
  2. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  3. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Step 3: Prepare the Lemon Glaze

  1. In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth. Adjust the consistency with more lemon juice or powdered sugar as needed.

Step 4: Glaze and Decorate

  1. Once the cake is completely cooled, drizzle the lemon glaze over the top, allowing it to drip down the sides.
  2. Optional: Garnish with thin lemon slices, fresh berries, or a sprinkle of powdered sugar for an elegant finish.

Tips for Success:

  • Room Temperature Ingredients: Ensure butter, eggs, and buttermilk are at room temperature for a smoother batter.
  • Extra Moisture: Brush the cake with additional lemon juice before glazing for an extra burst of lemon flavor.
  • Make It Fancy: For a layered version, frost the cake with lemon cream cheese frosting instead of glaze.

Serving Recommendations:

  • Pair with a cup of hot tea or iced lemonade for a refreshing combination.
  • Serve with a dollop of whipped cream or a scoop of vanilla ice cream for added indulgence.
