Ingredients

For the Casserole:

  • 2 tbsp unsalted butter
  • 1 ½ cups shredded sharp cheddar cheese
  • 1 cup sour cream
  • ½ cup milk

Instructions

1. Cook the Pierogi:

  1. Bring a large pot of salted water to a boil. Cook the frozen pierogi according to package instructions (usually 3-5 minutes). Drain and set aside.

2. Prepare the Sausage:

  1. In a large skillet, heat 1 tablespoon of butter over medium heat. Add the crumbled sausage and cook until browned and cooked through, breaking it up with a spoon as it cooks. Transfer the sausage to a plate and set aside.

3. Sauté the Onion:

  1. In the same skillet, add the remaining 1 tablespoon of butter. Add the chopped onion and sauté until softened and golden, about 5-7 minutes.

4. Assemble the Casserole:

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cooked pierogi, cooked sausage, sautéed onions, sour cream, milk, garlic powder, paprika, and salt and pepper to taste. Stir to combine.
  3. Transfer the mixture into a greased 9×13-inch casserole dish and spread it evenly.
  4. Sprinkle the shredded cheddar cheese over the top, and if desired, add grated Parmesan cheese for extra flavor.

5. Bake:

  1. Cover the casserole with aluminum foil and bake for 20-25 minutes.
  2. After 20-25 minutes, remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.

6. Serve:

  1. Remove the casserole from the oven and let it sit for a few minutes before serving.
  2. Garnish with fresh parsley and serve hot.
