Ingredients

Base Ingredients:

  • Whole wheat flour: 2 cups (240g)
  • Baking powder: 2 tsp
  • Baking soda: 1/2 tsp
  • Salt: 1/4 tsp
  • Eggs: 2 large
  • Greek yogurt: 1 cup (240g) or unsweetened applesauce
  • Honey or maple syrup: 1/2 cup (120ml)
  • Unsweetened almond milk: 1/2 cup (120ml)
  • Vanilla extract: 1 tsp
  • Coconut oil or melted butter: 1/4 cup (60ml)

Optional Ingredients:

  • Blueberries: 1 cup (150g)
  • Dark chocolate chips: 1/2 cup (80g)
  • Chopped nuts (walnuts, almonds): 1/2 cup (50g)
  • Shredded coconut: 1/4 cup (30g)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease with oil.
  2. Mix dry ingredients: In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.
  3. Combine wet ingredients: In a separate bowl, whisk eggs, Greek yogurt, honey, almond milk, vanilla extract, and coconut oil until smooth.
  4. Combine: Gradually add the wet mixture into the dry ingredients, stirring until just combined (do not overmix).
  5. Fold in optional ingredients (e.g., blueberries or nuts) if using.
  6. Portion: Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake: Place the tray in the preheated oven and bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool: Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Tips for Success

  1. Don’t overmix: Overmixing can make the muffins dense. Stir until just combined.
  2. Use fresh ingredients: Especially baking powder and soda for a good rise.
  3. Customize wisely: Too many add-ins can weigh down the batter, so keep extras to about 1 cup total.
  4. Room temperature ingredients: This helps everything blend smoothly.

Recommendations

  • Pair with a cup of tea or coffee for a cozy snack.
  • Store leftovers in an airtight container at room temperature for 2–3 days or freeze for up to 3 months.
  • Serve warm with a dollop of yogurt or a drizzle of honey for added indulgence.
