Ingredients
For the Filling:
2 cups mashed sweet potatoes (from about 2–3 medium sweet potatoes)
1 can (14 oz) sweetened condensed milk
2 large eggs
1 tsp vanilla extract
½ tsp ground cinnamon
¼ tsp ground nutmeg
¼ tsp ground ginger
¼ tsp salt
¼ cup unsalted butter, melted
For the Crust:
1 unbaked 9-inch pie crust (homemade or store-bought)
—
Instructions
1. Prepare the Sweet Potatoes
Preheat your oven to 350°F (175°C).
Peel and cube the sweet potatoes. Boil them in water until fork-tender, about 15–20 minutes.
Drain and mash until smooth.
2. Make the Filling
In a large bowl, combine mashed sweet potatoes, sweetened condensed milk, eggs, vanilla extract, spices (cinnamon, nutmeg, ginger), salt, and melted butter.
Whisk or mix until the filling is smooth and fully combined.
3. Assemble the Pie
Pour the filling into the unbaked pie crust and spread it evenly.
4. Bake
Bake for 45–50 minutes, or until the center is set and a knife inserted comes out clean.
If the crust edges brown too quickly, cover them with aluminum foil partway through baking.
5. Cool and Serve
Allow the pie to cool on a wire rack for at least 2 hours to fully set.
Serve on its own or topped with whipped cream or a scoop of vanilla ice cream.
