Chicago Public School Butter Cookies
A nostalgic, melt-in-your-mouth butter cookie with a soft, tender crumb—just like the classic treat once served in Chicago school cafeterias.
Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
2 cups all-purpose flour
1 teaspoon vanilla extract
Pinch of salt
Instructions:
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, cream the butter and sugar together until light and fluffy.
3. Add the vanilla extract, then gradually mix in the flour and salt until a soft dough forms.
4. Roll the dough into 1-inch balls and place them on the prepared baking sheet.
5. Gently flatten each ball with the bottom of a glass or your palm.
6. Bake for 12 to 15 minutes, or until the edges turn a light golden color.7. Let cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
