Ingredients (Quantities)

  • Chocolate cookies: 1 1/2 cups (150g), crushed (such as Oreo cookies or chocolate graham crackers)
  • Butter: 1/4 cup (60g), melted
  • Granulated sugar: 2 tablespoons (optional, depending on the sweetness of your cookies)

For the Cheesecake Filling:

  • Cream cheese: 3 (8oz) packages, softened
  • Granulated sugar: 1 cup (200g)
  • Eggs: 3 large
  • Sour cream: 1/2 cup (120g)
  • Vanilla extract: 1 teaspoon
  • Heavy cream: 1/4 cup (60ml)

For the Chocolate Ganache Topping:

  • Dark chocolate: 6 oz (170g), chopped
  • Heavy cream: 1/2 cup (120ml)
  • Butter: 2 tablespoons (30g), softened
  • Vanilla extract: 1/2 teaspoon (optional)

For the Chocolate Cream Pie Layer (Optional):

  • Instant chocolate pudding mix: 1 package (3.4 oz)
  • Milk: 2 cups (480ml)
  • Whipped cream: 1 cup (240ml), for topping

Instructions

  1. Preheat the oven and prepare the crust:
    • Preheat your oven to 325°F (163°C).
    • In a medium bowl, combine the crushed chocolate cookies, melted butter, and sugar (if using). Mix until the crumbs are well-coated.
    • Press the cookie mixture evenly into the bottom of a 9-inch springform pan. Use the back of a spoon to press the crust down firmly.
    • Bake the crust in the preheated oven for 10 minutes, then remove from the oven and set aside to cool.
  2. Prepare the cheesecake filling:
    • In a large mixing bowl, beat the softened cream cheese with the granulated sugar until smooth and creamy.
    • Add the eggs, one at a time, mixing well after each addition.
    • Stir in the sour cream, vanilla extract, and heavy cream until smooth and well-combined.
    • Pour the cheesecake filling over the cooled crust in the springform pan.
  3. Bake the cheesecake:
    • Place the cheesecake in the oven and bake for 55-60 minutes, or until the center is almost set but still slightly jiggly.
    • Turn off the oven and allow the cheesecake to cool in the oven for 1 hour with the door slightly ajar.
    • After the hour, remove the cheesecake from the oven and let it cool to room temperature before refrigerating for at least 4 hours, or overnight, to set.
  4. Prepare the chocolate ganache:
    • In a heatproof bowl, combine the chopped dark chocolate and heavy cream.
    • Microwave in 30-second intervals, stirring between each, until the chocolate is melted and smooth.
    • Stir in the softened butter and vanilla extract (if using) until the ganache is glossy and smooth.
    • Allow the ganache to cool for 10-15 minutes before pouring it over the chilled cheesecake.
  5. Assemble the cheesecake:
    • Once the cheesecake is fully chilled, pour the cooled ganache over the top of the cheesecake, spreading it evenly to cover the surface.
    • For an extra chocolate cream pie layer, prepare the instant chocolate pudding mix with milk according to the package instructions and spread it over the ganache layer.
    • Refrigerate the cheesecake again for about 1 hour to allow the ganache and pudding (if using) to set.
  6. Serve:
    • Just before serving, top with freshly whipped cream or whipped topping and a few chocolate shavings or curls for decoration.

Tips for Success

  • Cheesecake texture: For a smooth cheesecake texture, make sure the cream cheese is softened to room temperature before mixing.
  • Prevent cracks: Avoid overbaking the cheesecake, as it can lead to cracks. A slight jiggle in the center is perfect for a creamy texture.
  • Chill time: Be sure to refrigerate the cheesecake for at least 4 hours to ensure it sets properly and achieves the best texture.

Recommendations

  • Serve with a twist: For extra flavor, drizzle some salted caramel sauce over the chocolate ganache topping.
  • Pair with a beverage: This dessert pairs wonderfully with a rich coffee or a glass of dessert wine like port or sweet red wine.
