Ingredients:
For the Cake:
- 1 3/4 cups (220g) all-purpose flour

- 2 cups (400g) granulated sugar
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup (240ml) whole milk
- 1/2 cup (120ml) vegetable oil
- 2 teaspoons vanilla extract
- 1 cup (240ml) boiling water
For the Chocolate Frosting:
- 1 cup (230g) unsalted butter, softened
- 3 1/2 cups (450g) powdered sugar
- 3/4 cup (75g) unsweetened cocoa powder
- 1/2 cup (120ml) heavy cream
- 2 teaspoons vanilla extract
- Pinch of salt
Instructions:
1. Prepare the Cake Layers:
- Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
- In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed until smooth.
- Gradually stir in boiling water. The batter will be thin, but that’s normal!
- Divide the batter evenly between the prepared pans.
- Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
2. Make the Frosting:
- In a large bowl, beat the softened butter until creamy.
- Gradually sift in powdered sugar and cocoa powder, mixing on low speed.
- Add heavy cream, vanilla extract, and a pinch of salt. Beat on high speed until light and fluffy. Add more cream if needed to reach the desired consistency.
3. Assemble the Cake:
- Place one cake layer on a serving plate. Spread a thick layer of frosting on top.
- Add the second cake layer and frost the top and sides. Smooth with a spatula or create decorative swirls.
4. Serve:
- Slice and serve the cake as is, or garnish with fresh berries, chocolate shavings, or a drizzle of ganache.
