Ingredients:

- 1 3/4 cups (220g) all-purpose flour
- 3/4 cup (75g) unsweetened cocoa powder
- 2 cups (400g) granulated sugar
- 1 1/2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup (240ml) buttermilk
- 1/2 cup (120ml) vegetable oil
- 2 teaspoons vanilla extract
- 1 cup (240ml) hot coffee
For the Fudge Frosting:
- 1 cup (230g) unsalted butter, softened
- 2/3 cup (65g) unsweetened cocoa powder
- 3 1/2 cups (450g) powdered sugar
- 1/3 cup (80ml) heavy cream (or milk)
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
Instructions:
1. Prepare the Cake:
- Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
- In a large bowl, sift together the flour, cocoa powder, sugar, baking soda, baking powder, and salt.
- Add the eggs, buttermilk, oil, and vanilla extract. Mix until smooth.
- Slowly stir in the hot coffee, mixing until the batter is thin and smooth.
- Divide the batter evenly between the prepared pans.
- Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
2. Make the Fudge Frosting:
- In a large bowl, beat the softened butter and cocoa powder together until creamy.
- Gradually add the powdered sugar, alternating with the heavy cream, beating until smooth and fluffy.
- Mix in the vanilla extract and salt. Adjust the consistency by adding more cream if needed.
3. Assemble the Cake:
- Place one cooled cake layer on a serving plate. Spread a thick layer of fudge frosting on top.
- Place the second cake layer on top and frost the entire cake with the remaining frosting. Smooth with a spatula or create decorative swirls.
4. Serve:
- Slice and serve as is, or garnish with chocolate shavings, berries, or a drizzle of ganache for an extra touch.
