This Garlic Beef and Asparagus Stir-Fry is a quick and delicious dish that brings together tender strips of beef, crisp asparagus, and a savory garlic sauce. The combination of flavors is fresh, flavorful, and perfect for a weeknight meal. Ready in under 30 minutes, it’s a great balance of protein and veggies with a hint of umami from the soy sauce.

Ingredients:

For the Stir-Fry:

  • 1 lb (450g) beef sirloin or flank steak, thinly sliced against the grain
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tbsp vegetable oil (or sesame oil for added flavor)
  • 4 garlic cloves, minced
  • 1 small onion, sliced
  • 1 bell pepper, sliced (optional)
  • 2 tbsp soy sauce (low sodium, if preferred)
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce (optional for a sweeter taste)
  • 1 tsp sesame oil (optional for extra flavor)
  • 1 tsp grated fresh ginger (optional)
  • 1 tsp cornstarch mixed with 2 tbsp water (for thickening sauce)

Optional Ingredients:

  • 1 tbsp chili paste or red pepper flakes (for heat)
  • 1 tbsp rice vinegar (for tanginess)
  • Chopped green onions for garnish

Instructions:

1. Prepare the Beef and Vegetables:

  1. Slice the beef thinly against the grain for tenderness.
  2. Prepare the asparagus by snapping off the woody ends and cutting them into 2-inch pieces. If using bell peppers, slice them thinly as well.

2. Stir-Fry the Beef:

  1. Heat 1 tbsp of vegetable oil in a large pan or wok over medium-high heat.
  2. Add the beef and stir-fry for 3-4 minutes, until browned and cooked through. Remove the beef from the pan and set aside.

3. Cook the Vegetables:

  1. In the same pan, add another tablespoon of oil. Add the sliced onion and bell pepper (if using), and stir-fry for 2-3 minutes.
  2. Add the asparagus and continue stir-frying for another 4-5 minutes, until the vegetables are tender but still crisp. If using, add the ginger and garlic and stir-fry for 30 seconds, until fragrant.

4. Prepare the Sauce:

  1. In a small bowl, mix the soy sauce, oyster sauce, hoisin sauce (if using), and sesame oil. If you prefer a thicker sauce, stir in the cornstarch and water mixture.

5. Combine and Cook:

  1. Add the cooked beef back into the pan with the vegetables. Pour the sauce over the beef and vegetables, and stir to coat evenly.
  2. Continue to cook for another 1-2 minutes, until everything is heated through and the sauce has thickened slightly.

6. Serve:

  1. Garnish with chopped green onions or sesame seeds if desired.
  2. Serve the stir-fry with steamed rice or noodles for a complete meal.

Tips for Success:

  • Slice the beef against the grain to ensure tenderness.
  • For added flavor, marinate the beef for 10-15 minutes in a little soy sauce, garlic, and sesame oil before stir-frying.
  • If the stir-fry is too dry, add a splash of water or broth to loosen the sauce.

Recommendations:

  • Serve this stir-fry with a side of jasmine rice, brown rice, or noodles for a filling meal.
  • You can also customize the veggies by adding mushrooms, baby corn, or snap peas for more variety.
