A perfect balance of spice and umami, this quick stir-fry is ideal for weeknight dinners and pairs beautifully with rice or noodles.
Origin:
Inspired by Chinese and Middle Eastern cuisine, this dish takes influence from the bold cumin-spiced beef dishes found in Xinjiang cuisine. The combination of cumin, onions, and tender beef makes for a deeply flavorful and satisfying meal.
Ingredients:
- 1 lb (450g) beef sirloin or flank steak, thinly sliced
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 2 tbsp oil (vegetable or sesame oil)
- 1 ½ tsp cumin seeds
- 1 tsp ground cumin
- ½ tsp chili flakes (optional for heat)
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp rice vinegar
- ½ tsp sugar
- ½ tsp black pepper
- 2 tbsp water
- 2 green onions, chopped (for garnish)
Optional Ingredients:
- 1 bell pepper, sliced (for extra crunch)
- 1 tsp sesame seeds, for garnish
- ½ tsp Sichuan peppercorns, for extra numbness
- 1 tbsp hoisin sauce, for a touch of sweetness
Instructions:
1. Prep the Beef:
- Thinly slice the beef against the grain for tenderness.
- In a small bowl, mix the soy sauce, oyster sauce, rice vinegar, sugar, and black pepper.
- Toss the beef in the marinade and let it sit for 15-20 minutes.
2. Stir-Fry the Aromatics:
- Heat 1 tbsp of oil in a large pan or wok over medium-high heat.
- Add the cumin seeds and toast for 30 seconds until fragrant.
- Add the onions and cook until soft and caramelized, about 5-7 minutes.
- Stir in the garlic, ginger, and chili flakes (if using), and cook for another 30 seconds.
3. Cook the Beef:
- Push the onions to the side of the pan. Add the remaining 1 tbsp of oil and increase heat to high.
- Add the marinated beef in a single layer and let it sear for 1-2 minutes before stirring.
- Stir-fry for 3-4 minutes until the beef is browned and cooked through.
- Add 2 tbsp water to loosen the sauce and mix everything together.
4. Finish & Serve:
- Sprinkle with chopped green onions and sesame seeds.
- Serve hot over steamed rice, noodles, or stir-fried vegetables.
Tips for Success:
- Slice the beef thinly: This ensures quick cooking and tenderness.
- Don’t overcrowd the pan: Cook in batches if needed to get a good sear.
- Toast the cumin seeds: This enhances the deep, nutty flavor.
Recommended Pairings:
- Steamed Jasmine Rice or Garlic Fried Rice
- Stir-Fried Bok Choy or Spicy Szechuan Green Beans
- A Refreshing Cucumber Salad to balance the bold flavors
