  3. Strain the Curds: Place a cheesecloth or a fine mesh strainer over a bowl. Pour the mixture through, allowing the whey to drain. Let it sit for 15-30 minutes, depending on the desired texture (longer for firmer cheese).
  4. Season and Shape: Transfer the cheese to a bowl, add salt, and mix. If desired, add herbs, spices, or a bit of olive oil. Press into a mold or shape with your hands.
  5. Chill and Serve: Refrigerate for 30 minutes before serving for a firmer texture. Enjoy fresh or store in an airtight container for up to 5 days.
