Instructions
- Heat the Milk & Cream: In a saucepan over medium heat, combine heavy cream, milk, and sugar. Stir until sugar dissolves and mixture is warm (do not boil).
- Whisk the Egg Yolks: In a separate bowl, whisk egg yolks. Slowly add about ½ cup of the warm milk mixture, whisking constantly to temper the eggs.
- Cook the Custard: Pour the egg mixture back into the saucepan. Cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 5–7 minutes).
- Add Coffee & Flavoring: Remove from heat and stir in espresso powder (or brewed coffee), vanilla extract, and salt.
- Chill the Mixture: Pour the mixture through a fine-mesh sieve to remove any lumps. Cover and refrigerate for at least 4 hours or overnight.
- Churn the Ice Cream: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions (usually 20–25 minutes).
- Freeze & Serve: Transfer to a container and freeze for at least 2 hours before serving.
