½ cup buttermilk
¼ cup milk
2 tablespoons melted butter

Instructions
1. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
2. In a separate bowl, combine the egg, buttermilk, milk, and melted butter until smooth.
3. Add the wet mixture to the dry ingredients and stir until a soft dough forms.
4. On a lightly floured surface, roll out the dough to about ¼ inch thick, then cut into small squares.
5. Heat oil in a deep skillet to 350°F (175°C).
6. Fry the beignets in batches for 1–2 minutes per side, or until beautifully golden brown.
7. Drain on paper towels and generously dust with powdered sugar.
