Instructions

- Add water: Stir in 3–4 tbsp ice water until the dough comes together. Wrap and chill for 30 minutes.
- Roll & bake: Roll out, fit into a 9-inch pie pan, and bake at 190°C (375°F) for 15 minutes.
For the Chocolate Filling:
- Mix dry ingredients: In a saucepan, whisk ¾ cup sugar, ¼ cup unsweetened cocoa powder, 3 tbsp cornstarch, and a pinch of salt.
- Add milk: Gradually whisk in 2 cups whole milk and cook over medium heat, stirring constantly.
- Temper eggs: In a separate bowl, beat 3 egg yolks. Slowly whisk in some of the hot milk mixture, then pour back into the pan.
- Thicken & flavor: Cook until thickened, then remove from heat and stir in 1 tbsp butter and 1 tsp vanilla extract.
- Pour into crust and let cool.
For the Topping (Optional):
- Whip 1 cup heavy cream with 2 tbsp powdered sugar until stiff peaks form. Spread over the cooled pie.
