Origin:

Chocolate cake has been a classic dessert for centuries, but the combination of fudgy layers with rich frosting adds an extra indulgence that takes it to another level. This particular recipe combines the smoothness of fudge with the depth of chocolate, creating a dessert that’s both comforting and luxurious.

Ingredients:

For the chocolate cake:

  • 1 3/4 cups (220g) all-purpose flour
  • 3/4 cup (65g) unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (200g) granulated sugar
  • 1 cup (200g) packed brown sugar
  • 2 large eggs, at room temperature
  • 1 cup (240ml) buttermilk, at room temperature
  • 1/2 cup (120ml) vegetable oil
  • 2 tsp vanilla extract
  • 1 cup (240ml) hot water or hot coffee (for a deeper flavor)

For the chocolate fudge frosting:

  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (120ml) heavy cream
  • 2 cups (240g) powdered sugar
  • 1 cup (170g) semi-sweet chocolate chips
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1 tsp vanilla extract
  • Pinch of salt

For garnish (optional):

  • Shaved chocolate or chocolate curls
  • Sprinkles or chopped nuts (such as walnuts or pecans)

Optional Ingredients:

  • 1/2 cup (50g) sour cream for extra moisture in the cake
  • 1/4 cup (60ml) strong brewed coffee for a more intense chocolate flavor in the cake
  • A drizzle of chocolate ganache for extra richness

Instructions:

  1. Prepare the cake:
    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper.
  2. Mix the dry ingredients:
    • In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. Combine the wet ingredients:
    • In a separate bowl, whisk together the granulated sugar, brown sugar, eggs, buttermilk, oil, and vanilla extract until smooth.
    • Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  4. Add the liquid:
    • Slowly pour in the hot water or coffee, stirring until the batter is smooth. The batter will be thin, but this is normal.
  5. Bake the cake:
    • Pour the batter evenly into the prepared cake pans.
    • Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
    • Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  6. Make the chocolate fudge frosting:
    • In a medium saucepan, combine the butter, heavy cream, and powdered sugar over medium heat. Stir constantly until the butter is melted and the sugar dissolves.
    • Add the chocolate chips, cocoa powder, vanilla extract, and a pinch of salt. Stir until the chocolate is completely melted and the frosting is smooth.
    • Remove from heat and allow the frosting to cool to room temperature. The frosting will thicken as it cools.
  7. Assemble the cake:
    • Once the cakes have cooled completely, place one layer on a serving plate.
    • Spread a generous amount of chocolate fudge frosting over the top of the first layer.
    • Place the second layer on top and frost the top and sides of the entire cake with the remaining fudge frosting.
    • If desired, garnish with chocolate shavings, curls, or sprinkles for a decorative touch.
  8. Serve:
    • Let the cake set for about 15-20 minutes before slicing to allow the frosting to firm up.
    • Slice and enjoy your decadent Chocolate Fudge Layered Cake!

Tips for Success:

  • Room temperature ingredients: Ensure your eggs, buttermilk, and butter are at room temperature to create a smoother batter and frosting.
  • Moisture: If you prefer a more moist cake, you can add 1/2 cup of sour cream to the batter.
  • Avoid overbaking: Be careful not to overbake the cake as it can become dry. Check with a toothpick towards the end of baking to ensure it comes out clean but not overcooked.
  • Chill the frosting: If the frosting is too runny, place it in the fridge for 10-15 minutes to thicken before using.

Recommendations:

  • Serve this rich chocolate cake with a glass of milk, coffee, or even a scoop of vanilla ice cream to complement the chocolatey goodness.
  • For a festive occasion, top the cake with some festive sprinkles or decorative edible flowers.
