Virginia’s Fresh Apple Cake – A Family Favorite
This delicious Fresh Apple Cake was my mother-in-law’s signature recipe. She baked it every year for my husband’s birthday and again for Christmas. As she grew older and needed help stirring, I began assisting her in the kitchen—and in doing so, I learned exactly how she made it. I’ve carried on her tradition ever since, and I’m honored to share it with others.
Ingredients:
1½ cups vegetable oil
2 cups sugar
3 cups all-purpose flour
2 large eggs
1½ teaspoons baking soda
1 teaspoon salt
2 teaspoons vanilla extract
1 cup white raisins
1 cup chopped pecans
3 cups fresh apples, chopped
½ cup shredded coconut
½ cup red cherries, chopped
¼ teaspoon ground cinnamon
⅛ teaspoon ground cloves
⅛ teaspoon ground nutmeg
Instructions:
1. Combine all ingredients in a large mixing bowl and stir until well blended.
2. Pour the batter into a greased baking pan.
3. Bake at 325°F (163°C) for 1 hour and 10 minutes, or until a toothpick inserted into the center comes out clean.
4. Let the cake cool before serving.
This cake is full of rich, comforting flavors and holds a special place in our family’s memories.
