Ground Beef Vegetable Soup — Don’t Lose This Recipe! 😋

Hearty, comforting, and packed with flavor, this ground beef vegetable soup is the ultimate cozy meal for any night of the week. It’s loaded with tender beef, fresh veggies, and a rich tomato broth that tastes even better the next day!

Ingredients

2 pounds ground beef

4 carrots, diced

4 celery ribs, chopped

1 onion, chopped

4 potatoes, peeled and cut into 1-inch cubes

1 (15.25 oz) can whole kernel corn, drained and rinsed

1 (15 oz) can green beans, drained and rinsed

1 (15 oz) can peas, undrained

1 (15 oz) can tomato sauce

1 (14.5 oz) can whole tomatoes, crushed

Ground black pepper, to taste

1 bay leaf (or more, to taste)

⅛ teaspoon ground thyme

¼ cup water, as needed

 

Directions

1. In a large stockpot over medium-high heat, cook the ground beef until it’s browned and no longer pink, about 7–10 minutes. Drain off any excess grease.

2. Add the carrots, celery, and onion. Cook and stir until the vegetables begin to soften, about 5 minutes.

3. Stir in the potatoes, corn, green beans, peas (with their liquid), tomato sauce, and crushed tomatoes. Season with black pepper, bay leaf, and thyme.

4. Add about ¼ cup water if needed, adding more as the soup cooks to maintain your desired consistency.

5. Bring the soup to a gentle simmer, cover, and cook for about 1 hour, stirring occasionally, until the potatoes are tender and the flavors have blended beautifully.
