Ingredients (Serves 4):

For the Chicken Marinade:

  • Chicken thighs or breasts: 1.5 lbs (700 g), cut into bite-sized pieces
  • Yogurt: ½ cup (120 g), plain
  • Ginger-garlic paste: 1 tbsp
  • Turmeric powder: ½ tsp
  • Red chili powder: 1 tsp (adjust to taste)
  • Salt: ½ tsp

For the Gravy:

  • Vegetable oil or ghee: 2 tbsp
  • Onion: 1 large, finely chopped
  • Tomato puree: 1 cup (240 ml)
  • Heavy cream or coconut milk: ½ cup (120 ml)
  • Garlic: 3 cloves, minced
  • Ginger: 1-inch piece, grated
  • Green chilies: 2, slit (optional)
  • Coriander powder: 1 tsp
  • Cumin powder: 1 tsp
  • Garam masala: 1 tsp
  • Ground paprika: 1 tsp (optional, for color)
  • Salt: To taste
  • Fresh cilantro: 2 tbsp, chopped, for garnish

Instructions:

Step 1: Marinate the Chicken

  1. In a bowl, mix the chicken with yogurt, ginger-garlic paste, turmeric, chili powder, and salt.
  2. Cover and refrigerate for at least 30 minutes or up to 2 hours for best flavor.

Step 2: Sear the Chicken

  1. Heat 1 tablespoon of oil or ghee in a large skillet or pan over medium heat.
  2. Add the marinated chicken and sear until lightly browned, about 4-5 minutes per side. Remove the chicken and set aside.

Step 3: Prepare the Gravy

  1. In the same pan, add the remaining oil or ghee.
  2. Sauté onions until golden brown, about 8-10 minutes.
  3. Add garlic, ginger, and green chilies. Sauté for 1-2 minutes until fragrant.
  4. Stir in the coriander powder, cumin powder, garam masala, and paprika. Cook for 1-2 minutes, allowing the spices to bloom.
  5. Add the tomato puree and cook for 5-7 minutes until the oil separates from the mixture.

Step 4: Combine and Simmer

  1. Return the chicken to the pan and mix well with the gravy.
  2. Add ½ cup of water and simmer for 10-12 minutes, or until the chicken is fully cooked and tender.
  3. Stir in the heavy cream or coconut milk and cook for another 2 minutes.

Step 5: Garnish and Serve

  1. Sprinkle with fresh cilantro before serving.
  2. Serve hot with steamed basmati rice, naan, or roti.

Tips for Success:

  • Marination: For deeper flavors, marinate the chicken overnight.
  • Consistency: Adjust the thickness of the gravy by adding more water or cream, depending on your preference.
  • Balance the Heat: Control the spice level by adjusting the chili powder and green chilies.
  • Spice Freshness: Use freshly ground spices for the most authentic and bold flavors.

Recommendations:

  • Side Dishes: Pair with cucumber raita, mango chutney, or a simple Indian salad for a complete meal.
  • Vegetarian Option: Substitute chicken with paneer or chickpeas for a vegetarian version.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. The flavors deepen as it sits!
