Instructions:

  1. Make the Cupcakes:
    • Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.

    • In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.

    • In a saucepan, combine evaporated milk, sugar, butter, and egg yolks. Cook over medium heat, stirring constantly, until thickened (about 10 minutes).
    • Remove from heat and stir in vanilla, coconut, and pecans. Let cool to room temperature.
  3. Assemble the Cupcakes:
    • Spread or pipe the coconut-pecan topping over each cooled cupcake.
    • For extra flair, drizzle with chocolate ganache and garnish with a whole pecan.
