Instructions:
1. Make the Cake:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the buttermilk, vegetable oil, eggs, and vanilla extract. Mix until just combined.
- Gradually stir in the boiling water. The batter will be thin—this is normal.
- Divide the batter evenly between the prepared pans.
- Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
2. Make the Frosting:
- In a large bowl, beat the butter until creamy.
- Gradually add the powdered sugar and cocoa powder, beating until smooth.
- Mix in the vanilla extract.
- Add the heavy cream, one tablespoon at a time, until the frosting reaches your desired consistency.
3. Assemble the Cake:
- Place one cake layer on a serving plate. Spread a thick layer of frosting on top.
- Place the second cake layer on top and frost the top and sides of the cake.
- Smooth the frosting or create swirls for a decorative finish.
