Ingredients:
2 cups toasted pecans, finely chopped
1 cup graham cracker crumbs
1 cup packed brown sugar
½ teaspoon salt
2 tablespoons maple syrup
¼ cup apple juice (or bourbon for a richer flavor)
1 teaspoon vanilla extract
½ cup melted chocolate chips (for dipping)
Instructions:
1. Combine the Dry Ingredients
In a large mixing bowl, add the toasted pecans, graham cracker crumbs, brown sugar, and salt. Mix until evenly blended.
2. Add the Wet Ingredients
Pour in the maple syrup, apple juice (or bourbon), and vanilla extract. Stir until the mixture is fully combined and holds its shape when pressed together.
3. Shape the Mixture
Roll the mixture into 1-inch balls and arrange them on a baking sheet lined with parchment paper.
4. Chill
Place the sheet in the freezer for about 30 minutes, allowing the balls to firm up.
5. Dip in Chocolate
Once firm, dip each ball into the melted chocolate—cover them completely or just halfway, depending on your preference.
6. Set the Chocolate
Return the coated balls to the parchment paper and let the chocolate harden completely.
7. Store and Serve
Transfer the pecan pie balls to an airtight container and refrigerate until ready to enjoy.
