Ingredients:

  • 1 lb (450g) beef sirloin or flank steak, thinly sliced
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp oil (vegetable or sesame oil)
  • 1 ½ tsp cumin seeds
  • 1 tsp ground cumin
  • ½ tsp chili flakes (optional for heat)
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp rice vinegar
  • ½ tsp sugar
  • ½ tsp black pepper
  • 2 tbsp water
  • 2 green onions, chopped (for garnish)

Optional Ingredients:

  • 1 bell pepper, sliced (for extra crunch)
  • 1 tsp sesame seeds, for garnish
  • ½ tsp Sichuan peppercorns, for extra numbness
  • 1 tbsp hoisin sauce, for a touch of sweetness

Instructions:

1. Prep the Beef:

  1. Thinly slice the beef against the grain for tenderness.
  2. In a small bowl, mix the soy sauce, oyster sauce, rice vinegar, sugar, and black pepper.
  3. Toss the beef in the marinade and let it sit for 15-20 minutes.

2. Stir-Fry the Aromatics:

  1. Heat 1 tbsp of oil in a large pan or wok over medium-high heat.
  2. Add the cumin seeds and toast for 30 seconds until fragrant.
  3. Add the onions and cook until soft and caramelized, about 5-7 minutes.
  4. Stir in the garlic, ginger, and chili flakes (if using), and cook for another 30 seconds.

3. Cook the Beef:

  1. Push the onions to the side of the pan. Add the remaining 1 tbsp of oil and increase heat to high.
  2. Add the marinated beef in a single layer and let it sear for 1-2 minutes before stirring.
  3. Stir-fry for 3-4 minutes until the beef is browned and cooked through.
  4. Add 2 tbsp water to loosen the sauce and mix everything together.

4. Finish & Serve:

  1. Sprinkle with chopped green onions and sesame seeds.
  2. Serve hot over steamed rice, noodles, or stir-fried vegetables.
