Pineapple Pecan Cream Cheese Pound Cake

Moist, buttery, and bursting with tropical flavor, this Pineapple Pecan Cream Cheese Pound Cake is a rich Southern-style dessert that’s perfect for any occasion. The combination of cream cheese, pineapple, and toasted pecans creates a wonderfully soft texture and a sweet, nutty flavor in every slice.

Cake Ingredients

1 ½ cups (3 sticks) unsalted butter, softened

8 oz cream cheese, softened

3 cups granulated sugar

6 large eggs, at room temperature

2 tsp vanilla extract

3 cups all-purpose flour

½ tsp baking powder

½ tsp salt

1 cup crushed pineapple (drained, but still slightly moist)

1 cup chopped pecans (toasted for extra flavor)

Optional Pineapple Glaze

1 cup powdered sugar

2–3 tbsp pineapple juice (from drained pineapple or canned juice)

½ tsp vanilla extract

Pinch of salt

 

Instructions

1. Preheat the Oven:
Preheat your oven to 325°F (163°C).
Grease and flour a 10-inch Bundt or tube pan thoroughly, making sure every corner is coated.

2. Prepare the Batter:
In a large mixing bowl, cream the butter and cream cheese together until smooth and fluffy, about 3–4 minutes.
Gradually add the sugar, beating for another 3–5 minutes until the mixture is light and airy.
Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the creamed mixture, mixing on low speed until just combined.
Fold in the crushed pineapple and toasted pecans gently by hand.

3. Bake the Cake:
Pour the batter evenly into the prepared pan and smooth the top.
Bake for 1 hour 15 minutes to 1 hour 25 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 15–20 minutes, then carefully invert it onto a wire rack to cool completely.

4. Prepare the Pineapple Glaze (Optional):
Whisk together the powdered sugar, pineapple juice, vanilla, and salt until smooth and slightly thick.
Drizzle the glaze generously over the completely cooled cake.
