- Granulated sugar: ½ cup (100 g)
- Cocoa powder (unsweetened): ¼ cup (25 g)
- Baking powder: 1 tsp
- Salt: ¼ tsp
- Eggs: 3 large
- Vanilla extract: 1 tsp
- Water: 3 tbsp
- Vegetable oil: 2 tbsp
- Boiling water: ½ cup (120 ml)
For the Peanut Butter Filling:
- Cream cheese (softened): 8 oz (225 g)
- Peanut butter (creamy): ¾ cup (180 g)
- Powdered sugar: 1 ½ cups (180 g)
- Vanilla extract: 1 tsp
- Heavy cream: ¼ cup (60 ml)
For the Chocolate Ganache:
- Semi-sweet chocolate chips: ½ cup (90 g)
- Heavy cream: ¼ cup (60 ml)
For Topping:
- Reese’s Peanut Butter Cups (mini or regular, chopped): 5-6 pieces
- Whipped cream (optional): For garnish
Instructions:
Step 1: Bake the Cake
- Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and grease the paper lightly.
- In a medium bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt.
- In a separate bowl, beat the eggs, vanilla extract, and vegetable oil until smooth.
- Gradually mix the dry ingredients into the wet ingredients, adding the water to the mixture until well combined.
- Stir in the boiling water until the batter becomes smooth and thin.
- Pour the batter into the prepared pan and spread evenly. Bake for 12-15 minutes or until a toothpick inserted in the center comes out clean.
- Once baked, remove the cake from the oven and immediately turn it out onto a clean kitchen towel dusted with powdered sugar. Gently peel off the parchment paper. Roll the cake up with the towel, starting from the shorter side, and let it cool completely.
Step 2: Prepare the Peanut Butter Filling
- While the cake is cooling, beat together the softened cream cheese and peanut butter in a large bowl until smooth.
- Gradually add the powdered sugar, vanilla extract, and heavy cream. Beat until light and fluffy.
Step 3: Prepare the Ganache
- In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
- Pour the hot cream over the chocolate chips in a heatproof bowl. Let it sit for 2-3 minutes, then whisk until smooth and glossy.
Step 4: Assemble the Roll Cake
- Once the cake has cooled, carefully unroll it. Spread the peanut butter filling evenly over the entire surface of the cake, leaving a small border around the edges.
- Roll the cake back up without the towel, being careful to keep the filling inside.
- Place the rolled cake seam-side down on a serving platter.
Step 5: Add the Ganache and Toppings
- Pour the chocolate ganache over the top of the rolled cake, allowing it to drip down the sides.
- Sprinkle the chopped Reese’s Peanut Butter Cups over the ganache, and garnish with whipped cream if desired.
Tips for Success:
- Chill the cake roll: If the cake is too soft to handle, refrigerate the cake for 20-30 minutes after rolling it to make it easier to slice.
- Smooth ganache: Ensure the ganache is smooth by whisking it well after pouring the hot cream over the chocolate.
- Storage: Store leftover cake in an airtight container in the refrigerator for up to 3 days.
Recommendations:
- Serving Suggestion: Serve slices of the cake with a drizzle of extra peanut butter or chocolate sauce for an indulgent treat.
- Freezing: This roll cake can be frozen before the ganache step. Wrap the cake tightly in plastic wrap and freeze for up to 2 months. Thaw in the refrigerator before adding the ganache and toppings.
