Ingredients:
For the Black Velvet Cake:
- 1 3/4 cups (220g) all-purpose flour
- 1/2 cup (45g) unsweetened black cocoa powder
- 1 1/2 cups (300g) granulated sugar
- 1/2 cup (120ml) vegetable oil
- 2 large eggs
- 1 cup (240ml) buttermilk
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 1 teaspoon baking soda
- 1/4 teaspoon salt
For the Vanilla Frosting:
- 8 oz (225g) cream cheese, softened
- 1/2 cup (115g) unsalted butter, softened
- 3 cups (360g) powdered sugar, sifted
- 1 teaspoon vanilla extract
For the Dark Chocolate Glaze:
- 1/2 cup (120ml) heavy cream
- 4 oz (115g) dark chocolate, chopped
- 1 tablespoon unsalted butter
Instructions:
1. Make the Black Velvet Cake:
- Preheat the oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
- In a large bowl, sift together the flour, black cocoa powder, sugar, baking soda, and salt.
- In a separate bowl, whisk together the vegetable oil, eggs, buttermilk, vanilla extract, and vinegar until smooth.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Divide the batter evenly between the prepared pans and bake for 25–30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
2. Prepare the Vanilla Frosting:
- Beat the cream cheese and butter together in a large bowl until creamy.
- Gradually add the powdered sugar, one cup at a time, beating well after each addition.
- Mix in the vanilla extract until smooth.
3. Assemble the Cake:
- Place one cake layer on a serving plate or cake stand. Spread a generous layer of vanilla frosting over the top.
- Place the second cake layer on top and spread a thin crumb coat of frosting over the entire cake. Refrigerate for 20 minutes to set.
- Apply a final layer of frosting, smoothing it with a spatula.
4. Make the Dark Chocolate Glaze:
- Heat the heavy cream in a small saucepan until it just begins to simmer. Remove from heat and add the chopped dark chocolate.
- Let sit for 2–3 minutes, then stir until smooth and glossy. Stir in the butter for extra shine.
5. Decorate the Cake:
- Pour the glaze over the frosted cake, letting it drip down the sides for a dramatic effect.
- Allow the glaze to set for 10–15 minutes before serving.
Tips for Success:
- Use high-quality black cocoa powder for the deepest, richest color and flavor.
- Chill the cake layers before frosting for easier assembly.
- For a touch of elegance, garnish the top with chocolate shavings or edible gold leaf.
Recommendations:
- Pair this cake with a glass of red wine or a steaming cup of espresso for the ultimate indulgence.
- Store leftovers in an airtight container in the fridge for up to 3 days.
