Swiss Roll Meets Black Forest Charm
Description:
This Swiss roll takes inspiration from the classic Black Forest cake, combining the richness of chocolate sponge cake with a luscious cherry filling and whipped cream. Rolled to perfection and topped with more cherries and chocolate, it’s a show-stopping dessert that’s perfect for any celebration or special occasion.
Ingredients (Serves 8-10):
For the Chocolate Sponge Cake:
- Eggs: 4 large, at room temperature
- Granulated sugar: ¾ cup
- Vanilla extract: 1 tsp
- All-purpose flour: ⅔ cup
- Cocoa powder: ⅓ cup, unsweetened
- Baking powder: 1 tsp
- Salt: ¼ tsp
For the Cherry Filling:
- Cherry pie filling: 1½ cups
- Kirsch (optional): 1 tbsp (traditional cherry liqueur)
For the Whipped Cream Filling:
- Heavy cream: 1 cup, chilled
- Powdered sugar: 3 tbsp
- Vanilla extract: 1 tsp
For Garnish:
- Chocolate shavings or curls: ½ cup
- Fresh cherries or maraschino cherries: 8-10
Instructions:
Step 1: Prepare the Sponge Cake
- Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
- In a mixing bowl, beat the eggs and granulated sugar until light and fluffy, about 5 minutes. Add the vanilla extract and mix to combine.
- Sift together the flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until no streaks remain.
- Pour the batter into the prepared pan and spread evenly. Bake for 10-12 minutes, or until the cake springs back when lightly touched.
- Immediately turn the cake onto a clean kitchen towel dusted with cocoa powder. Peel off the parchment paper and roll the cake, starting from the short end, with the towel. Let it cool completely.
Step 2: Prepare the Fillings
- If using Kirsch, mix it with the cherry pie filling. Set aside.
- Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Step 3: Assemble the Roll
- Unroll the cooled cake carefully. Spread an even layer of whipped cream, leaving a 1-inch border along the edges.
- Add a thin layer of cherry filling on top of the whipped cream.
- Gently re-roll the cake, ensuring the filling stays intact. Transfer to a serving plate, seam side down.
Step 4: Decorate
- Spread or pipe a thin layer of whipped cream on the top of the roll.
- Garnish with chocolate shavings and cherries. Chill for at least 1 hour before serving for the flavors to meld together.
Tips for Success:
- Prevent Cracks: Roll the cake while it’s warm to avoid cracks. Cooling it in the rolled shape helps maintain flexibility.
- Even Layers: Use a spatula to spread the fillings evenly, preventing overstuffing.
- Presentation: For clean slices, use a sharp knife and wipe it between cuts.
Recommendations:
- Make It Ahead: The roll can be made a day in advance and refrigerated. Decorate just before serving for the freshest look.
- Variations: Substitute the cherry filling with raspberries or strawberries for a different fruity twist.
