Swiss Roll Meets Black Forest Charm

Description:

This Swiss roll takes inspiration from the classic Black Forest cake, combining the richness of chocolate sponge cake with a luscious cherry filling and whipped cream. Rolled to perfection and topped with more cherries and chocolate, it’s a show-stopping dessert that’s perfect for any celebration or special occasion.

Ingredients (Serves 8-10):

For the Chocolate Sponge Cake:

  • Eggs: 4 large, at room temperature
  • Granulated sugar: ¾ cup
  • Vanilla extract: 1 tsp
  • All-purpose flour: ⅔ cup
  • Cocoa powder: ⅓ cup, unsweetened
  • Baking powder: 1 tsp
  • Salt: ¼ tsp

For the Cherry Filling:

  • Cherry pie filling: 1½ cups
  • Kirsch (optional): 1 tbsp (traditional cherry liqueur)

For the Whipped Cream Filling:

  • Heavy cream: 1 cup, chilled
  • Powdered sugar: 3 tbsp
  • Vanilla extract: 1 tsp

For Garnish:

  • Chocolate shavings or curls: ½ cup
  • Fresh cherries or maraschino cherries: 8-10

Instructions:

Step 1: Prepare the Sponge Cake

  1. Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
  2. In a mixing bowl, beat the eggs and granulated sugar until light and fluffy, about 5 minutes. Add the vanilla extract and mix to combine.
  3. Sift together the flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until no streaks remain.
  4. Pour the batter into the prepared pan and spread evenly. Bake for 10-12 minutes, or until the cake springs back when lightly touched.
  5. Immediately turn the cake onto a clean kitchen towel dusted with cocoa powder. Peel off the parchment paper and roll the cake, starting from the short end, with the towel. Let it cool completely.

Step 2: Prepare the Fillings

  1. If using Kirsch, mix it with the cherry pie filling. Set aside.
  2. Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

Step 3: Assemble the Roll

  1. Unroll the cooled cake carefully. Spread an even layer of whipped cream, leaving a 1-inch border along the edges.
  2. Add a thin layer of cherry filling on top of the whipped cream.
  3. Gently re-roll the cake, ensuring the filling stays intact. Transfer to a serving plate, seam side down.

Step 4: Decorate

  1. Spread or pipe a thin layer of whipped cream on the top of the roll.
  2. Garnish with chocolate shavings and cherries. Chill for at least 1 hour before serving for the flavors to meld together.

Tips for Success:

  • Prevent Cracks: Roll the cake while it’s warm to avoid cracks. Cooling it in the rolled shape helps maintain flexibility.
  • Even Layers: Use a spatula to spread the fillings evenly, preventing overstuffing.
  • Presentation: For clean slices, use a sharp knife and wipe it between cuts.

Recommendations:

  • Make It Ahead: The roll can be made a day in advance and refrigerated. Decorate just before serving for the freshest look.
  • Variations: Substitute the cherry filling with raspberries or strawberries for a different fruity twist.
