  • 1/2 cup (75g) shredded carrots (optional)
  • 1/4 cup (40g) chopped fresh dill

For the Dressing:

  • 1/2 cup (120g) mayonnaise
  • 1/2 cup (120g) sour cream or Greek yogurt
  • 1/4 cup (60ml) dill pickle juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and pepper, to taste

Optional Additions:

  • 1/2 cup shredded cheddar cheese
  • Crumbled bacon for extra flavor
  • Sliced hard-boiled eggs for added protein

Instructions:

1. Cook the Pasta:

  • Cook the pasta in salted boiling water according to package instructions. Drain and rinse under cold water to cool. Set aside.

2. Prepare the Dressing:

  • In a large bowl, whisk together mayonnaise, sour cream (or yogurt), dill pickle juice, Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper. Adjust seasonings to taste.

3. Combine Salad Ingredients:

  • Add the cooked pasta, diced dill pickles, red onion, celery, shredded carrots, and fresh dill into the bowl with the dressing. Toss to combine thoroughly.
