Tonight truly tested my willpower — and I’m proud of how it turned out.

My husband and son were craving Chick-fil-A (our family go-to), and that creamy, golden mac and cheese was seriously tempting me. But instead of giving in, I came home determined to make something that aligned with my goals and satisfied that comfort food craving — and wow, it actually worked!

I made a Cauliflower Mac & Cheese that’s rich, cheesy, and completely guilt-free. I used about 2 cups of boiled and drained cauliflower, then mixed it with 1 oz of cream cheese, ½ cup of shredded mixed cheese, and 2 tablespoons of sour cream while it was still warm. The heat melted everything together beautifully — smooth, cozy, and full of flavor, without the carb crash.

It may not be Chick-fil-A’s version, but honestly… it’s one my body and goals can both appreciate. 💪💛
