Ingredients

  • Vanilla extract: 1 tsp
  • All-purpose flour: 1/2 cup (65g)
  • Salt: 1/4 tsp

For the Chocolate Mousse Layers:

  1. Dark Chocolate Layer:
    • Dark chocolate: 6 oz (170g), chopped
    • Heavy cream: 1 1/4 cups (300ml)
    • Gelatin: 1 tsp, dissolved in 2 tbsp water
  2. Milk Chocolate Layer:
    • Milk chocolate: 6 oz (170g), chopped
    • Heavy cream: 1 1/4 cups (300ml)
    • Gelatin: 1 tsp, dissolved in 2 tbsp water
  3. White Chocolate Layer:
    • White chocolate: 6 oz (170g), chopped
    • Heavy cream: 1 1/4 cups (300ml)
    • Gelatin: 1 tsp, dissolved in 2 tbsp water

Instructions

1. Make the Brownie Base:

  1. Preheat oven to 350°F (175°C). Grease and line the bottom of a 9-inch springform pan with parchment paper.
  2. In a mixing bowl, whisk melted butter, sugar, and cocoa powder until smooth.
  3. Add eggs and vanilla, mixing well.
  4. Gently fold in flour and salt until just combined.
  5. Spread the batter evenly in the prepared pan. Bake for 18–20 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  6. Let the brownie base cool completely in the pan.

2. Prepare the Chocolate Mousse Layers:

  1. Dark Chocolate Layer:
    • Melt dark chocolate in a heatproof bowl over a saucepan of simmering water, stirring until smooth. Let cool slightly.
    • Whip 1 cup of cream to soft peaks. Stir dissolved gelatin into the melted chocolate, then gently fold in whipped cream.
    • Spread over the brownie base and refrigerate for 30 minutes.
  2. Milk Chocolate Layer:
    • Repeat the same process with milk chocolate, whipped cream, and gelatin.
    • Spread the milk chocolate mousse over the dark chocolate layer and refrigerate for another 30 minutes.
  3. White Chocolate Layer:
    • Repeat with white chocolate, whipped cream, and gelatin.
    • Spread the white chocolate mousse over the milk chocolate layer. Smooth the top and refrigerate for at least 4 hours or overnight to set completely.

Decorating the Torte

  • Garnish with chocolate curls, cocoa powder dusting, or fresh berries for a festive touch.
