Ingredients
2 large chicken breasts
½ cup roasted red peppers, sliced
½ cup fresh spinach leaves
½ cup shredded mozzarella cheese
1 tbsp olive oil
½ tsp garlic powder
Salt and pepper, to taste
Toothpicks or kitchen twine

1 tbsp butter
1 garlic clove, minced
½ cup chicken broth
¼ cup heavy cream

Directions
1. Prepare the Chicken
Preheat the oven to 375°F (190°C). Cut a pocket into the side of each chicken breast. Fill each pocket with roasted red peppers, spinach, and mozzarella cheese. Secure with toothpicks or kitchen twine. Season both sides with garlic powder, salt, and pepper.
2. Sear the Chicken
Heat olive oil in an oven-safe skillet over medium heat. Sear the chicken for 3–4 minutes per side, until golden brown.
3. Bake
Transfer the skillet to the oven and bake for 15–20 minutes, or until the chicken is fully cooked and the cheese is melted.
4. Make the Sauce (Optional)
In a small saucepan, melt butter over medium heat. Add minced garlic and sauté for about 30 seconds. Pour in chicken broth and heavy cream, then simmer until the sauce thickens slightly. Season with salt and pepper.
5. Serve
Plate the stuffed chicken breasts and drizzle with the creamy garlic sauce, if desired.
